Easy 5-a-day healthy eating

A friend came out to stay in November. I asked her to bring a packet of coriander seeds. She also brought a pack of mixed lettuce varieties and spinach.

C’s mum planted them (It’s not that I can’t garden – although I am a bit of a wuss when it comes to snails, slugs and worms – but she obviously recognises a city girl who is capable of killing any plant at 20 m !)

They shot up. I have donated bunches of coriander to all the cooks I know here in Ioannina and stuffed the freezer full of flat leaves and still they bloom.

The spinach has taken over the salad garden and alongside them the rows of lettuce have kept me supplied with lunch for the past three months.

All this grows in a five metre square of soil under the orange and lemon trees, a stone throw from my back door. How easy (and cheap) is healthy eating when you can produce your own fruit and vegetables to satisfy your 5 a day!
